Cooking with the Princess

Here is a 20-Minute Princess Meal for the gorgeous girls on- the- go!

I've compiled a couple of recipes that every Perfect Princess should know. These are our tiny little secrets to romance and a healthy lifestyle.  Anyway, we have to cook for our special Princes this Saint Valentin's Day, and every day of the Princess week.  So, let's surprise him this time with his choice of 3 PrincessilyTM delicious meals!


Lemony Shrimp with White Beans and Couscous

hands-on time: 20 minutes/ total time: 20 minutes/ serves 4

1 10-ounce box couscous (1½ cups)
Kosher salt and black pepper
3 tablespoons unsalted butter
2 cloves garlic, chopped
4 scallions, chopped
1 pound medium shrimp, peeled and deveined
1 15.5-ounce can cannellini beans, rinsed
½ cup fresh flat-leaf parsley
2 tablespoons fresh lemon juice

  • In a saucepan, bring 2 cups water to boil.  Stir in the couscous and ¼ teaspoon salt.  Cover and let sit off heat for 5 minutes; fluff with a fork before serving.
  • Meanwhile, heat 1 tablespoon of the butter in a large skillet over medium-high heat.  Add the garlic and scallions and cook for 30 seconds.  Add the shrimp and cook, stirring until they begin to turn pink, about 3 minutes.
  • Stir in the beans, parsley, lemon juice, the remaining butter, 1 teaspoon salt, and ¼ teaspoon pepper.  Cook until heated through, 2 to 3 minutes.  Serve with the couscous.

Chocolate Panini - with The Princess

Princesses, we love chocolate, right?  It is a "natural" aphrodisiac.  We also love to be romanced.  Why?  Because we are the Ulitimate Princesses.  Every Prince should swarm around us like bees. Not just on Valentine's Day, but every day.  So, prepare your best desserts!

Ok, so we've already taken our romantic trips this week to St. Tropez, and our deliciously romantic trips to Cabo San Lucas last month.  Now, it is our time to "give thanks" in return for such awesome dates!

Why not give the gift of chocolate?

hands-on time:  5 minutes/ total time: 5 minutes/ serves 2

Just in time for Saint Valentin's Day!

4 slices challah or white bread
2 ounces semisweet chocolate, chopped

Form 2 sandwiches with the bread and chocolate.  Transfer to a hot panini press or waffle iron and cook until the bread is golden and the chocolate has melted, 2 to 3 minutes.  (Alternatively, cook the sandwhiches in a hot grill pan, turning once and pressing down frequently.)

Who would have thought that cold soups could jump-start your metabolism AND prevent your cravings?

Pro chefs spoon up two healthy dishes of chilled recipes that beat the heat- and leave you feeling fabulous!

Almond-Grape Soup - JUMP-STARTS METABOLISM:

"Although this soup is made with grapes, it's definitely not too sweet," says chef Mary Sue Milliken, co-owner of Ciudad restaurant in Los Angeles and coauthor of Mexican Cooking for Dummies (Wiley). "Toasted almonds give it a hearty flavor while the garlic provides some savory oomph."

How To Make: In bowl of food processor, pured 1 and a half cups roasted almonds and 2 cloves garlic, peeled, 45 sec., or until finely ground. In large bowl or pie plate, soak four 1 and half-thick slices statel country bread, crusts removed, in cold water 15 minutes. Remove bread from bowl and squeeze out excess water. Add bread to almond mixture in food processor; pulse until smooth. With processor running, graually add half cup olive oil in thin stream and 4 Tbs. sherry vinegar. Scrape down sides. With processor running, add 1 cup white grape juice, 6 cups halved seedless white grapes (1 cup at a time) and 1 cup ice water. Pulse mixture until smooth. Season with salt and pepper to taste. Chill soup 6 hours. Garnish with grape halves, almond slices and fresh mint sprig, if desired.
